Digestion is the breakdown of large, insoluble food compounds into small, water-soluble components that can be absorbed into the blood plasma. It is a form of catabolism and is commonly divided into mechanical digestion (physical breakdown of food into smaller pieces) and chemical digestion (enzymes break food into usable small molecules). In humans, digestion begins in the mouth with chewing (mastication) and saliva, which contains enzymes such as salivary amylase to start starch digestion. As food moves through the digestive tract, different organs and conditions support different stages of digestion. In the stomach, gastric juice (including hydrochloric acid and pepsin) begins protein digestion while mucus and bicarbonates protect the stomach lining from acid. Peristalsis mechanically mixes food with digestive juices, forming chyme that enters the duodenum, where it is further processed with pancreatic enzymes and bile. Digestion continues mainly in the small intestine, where most nutrient absorption occurs, while the colon reabsorbs water and some vitamins produced by gut bacteria. The purpose of digestion is not only to extract energy and building blocks from food but also to make nutrients absorbable and usable by the body under tightly regulated chemical conditions, especially pH. Digestive hormones coordinate timing and secretion of digestive juices and motility, ensuring that enzymes work efficiently and that the digestive environment is appropriately acidic or neutral in each region.
